Healthy Berry French Toast

 French toast is one of our favorites for breakfast.  It’s comfort food anytime of the year.  You can make the batter the night before, letting the bread become even more flavorful.  We love the added fiber that comes from the berries, flax meal and chia seeds.  They make this a healthy and guilt-free breakfast.


(serves 3-4)

  • 4 egg whites
  • 1 c unsweetened almond milk
  • 2 teaspoon flax meal 
  • 2 teaspoon chia seeds 
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon honey
  • 1 pinch salt
  • 8-10 slices whole wheat Italian bread
  • ½ fresh strawberries, sliced
  • ½ c fresh blueberries
  • maple syrup, to taste


1. Mix the first 7 ingredients in medium bowl.  Place in the fridge for 10 minutes.

2. Preheat griddle on medium heat and generously coat with no-stick cooking spray. 

3. Dip each slice of bread in the batter and coat each side evenly.  Spray griddle with no-stick spray as needed.

4. Place the bread on griddle and cook until each side is golden brown.

5. Top with your favorite toppings.  We chose strawberries and blueberries and little maple syrup.
