Decadent and Healthy Chocolate Chip Cookies

Hey Moms, don't worry about ever having to wear "Mom Jeans" by enjoying these Decadent and Healthy Chocolate Chip Cookies.  They contain rolled oats and flax!


Makes approx. 50-60 cookies

1 1/4 cups all-purpose whole wheat flour

3/4 whole grain oats

2 teaspoons flaxseed meal

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup extra-light olive oil

3 tablespoons unsalted butter

1/2 cup sugar

1/2 cup dark brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1/2 c mini semi-sweet chocolate chocolate chips


Instructions

1. Preheat oven to 350 degrees.

2. In a medium bowl, mix flour, oats, flaxseed meal, baking soda, and salt; set aside. 

3. In a large bowl, beat together oil, butter, and sugars.  Add eggs and vanilla, beating until well combined.

4. Fold in flour and oats mixture. Then, add the chocolate chips. 

5. Cover and refrigerate dough for at least 45 min - 1 hr.

6. Drop teaspoon sized dough 2 inches apart on parchment lined baking sheets.  Bake, rotating sheets halfway through, for 8-12 minutes.  Cool 5 minutes; transfer to wire racks to cool completely.
