Avocado Ginger Grilled Cheese

Ginger adds a pleasant surprise to this healthy and decadent version of the grilled cheese sandwich. The combination of flavors in the avocado-ginger-garlic spread makes this the ultimate comfort food. My first taste testers were a little hesitant but after the first bite, their tastebuds were screaming for another! What makes this healthier than the typical grilled cheese sammy? It's unique energy packed ingredients. They provide essential vitamins, minerals, antioxidants and fiber.

Ingredients: 

(serves 4)

  • no-stick cooking spray
  • 1 ripe avocado
  • 1½ teaspoon fresh ginger, minced
  • 1½ teaspoons garlic, minced
  • 8 slices muenster, thinly sliced
  • 8 slices whole grain bread
  • margarine or butter

Directions:

1.  In a small bowl, mash together the avocado, ginger, and garlic.

2.  Generously spray a griddle or skillet with no-stick cooking spray and heat on low-medium temperature.

3.  Spread ½ teaspoon of margarine on the outside of each slice of bread.

4.  Coat ginger garlic avocado spread on the inside of each slice of bread.

5.  Add the cheese to finish off the sandwich. 

6.  Cook each side for 1-2 minutes or until the cheese melts and the bread is golden brown on the outside.

Serve with a heart healthy salad or tomato soup.
