Lettuce Wraps with Curried Chicken and Tabbouleh

These wraps are great for lunch or dinner.  I like to top the curried chicken with tabbouleh or quinoa salad.  Either salad will add fiber and a refreshing flavor.  Make it your own and add whatever vegetables and beans you have on hand.  If you want to make your cooking duties even easier, prepare the curried chicken and tabbouleh in advance.  Friends and family will love your healthy and gourmet wraps!

Ingredients (Serves 4)

Directions

1.  In a medium bowl, prepare the curried chicken (mix: mayo, lemon juice, curry powder, chicken, and worcestershire).  Cover and chill for at least thirty minutes prior to serving.

2.  Spoon chicken into lettuce cup.  Add tabbouleh or quinoa.  Then, top with your favorite veggies and beans.
