Roasted Turkey, Fresh Watermelon and Arugula Sandwich

This summer sandwich is delectably mouthwatering.  The flavors of the watermelon add a whole new dimension to the traditional turkey sandwich.  Who knew watermelon would be a perfect substitute for tomato?  Nutritionally speaking, watermelon is a rich source of vitamin C and the powerful antioxidant lycopene.  Lycopene gives watermelon, tomatoes, and other fruits and vegetables its bright red pigment.  Antioxidants help to fight free radicals in our bodies that can cause damage to our cells.  Therefore, lycopene may reduce the risk of heart disease, cancer, and other illnesses. 

Ingredients

  • 2 slices whole grain bread
  • honey Dijon mustard, to taste
  • balsamic glaze to taste
  • 3 oz roasted organic turkey breast
  • 1 slice watermelon
  • ½ c arugula
  • 1 tablespoon feta

Directions

1. Spread the honey Dijon and balsamic glaze on both pieces of bread. 

2. Layer the turkey slices on top of one slice of bread. 

3. Top with the watermelon, arugula, and feta.  Drizzle with balsamic glaze.

4. Add the second piece of bread. 

5. Slice and serve!
