Cucumber Hummus

Homemade hummus is easy and delicious.  It requires just a few ingredients and a blender.  Pair this refreshing dip with your favorite vegetables and grilled flat bread or use it as a spread.  It's a healthy energy packed snack with iron, protein, and fiber.


1 can (15.5 oz) garbanzo beans, drained

1 lemon, juiced

1 teaspoon extra-virgin olive oil

1 teaspoon garlic, minced

1 tablespoon tahini paste

1 c cucumber, sliced

1/2 teaspoon sea salt


1. Place all ingredients into food processor or blender.

2. Puree until smooth.

3. Pour into a serving bowl.  Cover and chill for 1-2 hours.
