Easy Split Pea Soup

The color of split pea soup may not be very appealing to most but it delivers a big warm hug in the form of comforting flavors on any cold winter day.

Split peas are loaded with protein, fiber, and B vitamins, which help increase energy levels, lower cholesterol, and strengthen our immune system. Did I mention this recipe is super easy to make? It can be on the table in less than an hour with only 15 minutes of prep.

  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons garlic, minced
  • 1/2 c celery, finely chopped
  • 1 medium yam, diced

  • 1 ham bone (leave some ham on the bone for added flavor)
  • 1 pound dried split peas
  • 48 oz. chicken broth
  • sea salt, to taste
  • fresh ground pepper, to taste

*Time saver-substitute 2 c mirepoix (store bought) for celery, yam, onion, and carrots.

1. In a large stock pot, warm olive oil over medium heat.  Add garlic, celery, yam, onion, and carrots. Saute until tender.

2. Add ham bone and chicken broth, bring to a boil.  Reduce the heat to medium and simmer.

3. Rinse the split peas with cold water.  Add peas to stock pot stirring occasionally for 45 minutes or until the they are tender.
