Healthy Slow Cooker Chicken Tortilla Soup

Healthy Slow Cooker Chicken Tortilla Soup:

This healthy chicken tortilla soup recipe could not be easier.  I've taken our favorite chicken tortilla soup and lowered the fat and sodium content without sacrificing its delicious flavor.  The black beans provide additional protein and fiber.  Protein enhances our energy stores while fiber keeps us feeling fuller longer.  I recommend doubling this recipe.  It's even better the next day for lunch or dinner.  I would imagine it freezes well too but it never lasts longer than a day in our house-good sign.  Get your slow cooker ready! 


Ingredients

(4-6 servings)

  • 1 (4 lb.) rotisserie chicken, skin removed, meat shredded
  • 1 (32 oz.) box low-sodium chicken broth
  • 1 (15.5) can black beans, rinsed and drained
  • 1½ cups fresh tomatoes, diced
  • 1 tablespoon garlic, minced
  • 2 tablespoons green chilies (mild), diced
  • ½ cup salsa (mild)
  • ½ cup salsa con queso dip
  • 1 tablespoon cumin, ground
  • sour cream, to taste
  • 2 cups Mexican cheese
  • ½ cup cilantro, finely chopped
  • tortilla strips

Directions

1. Combine all ingredients in a slow cooker or crock-pot.  Hold the sour cream, cheese, cilantro, and tortilla strips.

2. Cover and cook on low 4-6 hours.

3. Ladle soup into bowls. Top with sour cream, cheese, cilantro, and tortilla strips.
