Recipe- Carrot Ginger Bisque

Wegman's Carrot Ginger Bisque

Ingredients:

1 pkg (3 lbs) Food You Feel Good About Baby Carrots
2 Tbsp Wegmans Basting Oil
2 Tbsp Wegmans Vegetable Oil
2 medium yellow onions, peeled, diced (about 2 cups)
2 Tbsp chopped fresh ginger root
2 cartons (32 oz each) Food You Feel Good About Thai Culinary Stock
1 container (32 oz) Bolthouse Farms 100% Carrot Juice
1 1/2 Tbsp Garden Gourmet Lemon Grass Herb Blend (Produce Dept)
2 Tbsp sesame oil (International Foods)
1/4 cup hoisin sauce (International Foods)
1 Tbsp kosher salt

You'll Need: Handheld blender

Directions:

Preheat oven to 450 degrees.

  1. Toss carrots and basting oil in large bowl. Spread in single layer on baking sheet. Roast on center rack of oven 30-45 min, until lightly browned and tender. Set aside.
  2. Add vegetable oil to stockpot on MEDIUM. Add onions; cook, stirring 10 min. Add ginger; cook, stirring, about 2 min. Add roasted carrots and stock. Bring to a boil; simmer 10 min.
  3. Add carrot juice. Carefully puree soup with handheld blender until smooth. Add lemon grass, sesame oil, hoisin sauce, and salt. Blend well. Simmer 5 min.
