This meatless side or snack is perfect any day of the week. Red wine and balsamic vinegar support gut health, boost immunity, and aid digestion. Beans are a protein and fiber powerhouse, known for their fat-burning properties, making this recipe both tasty and nutritious.

The vinegar and honey base pairs well with any combination of beans and vegetables. Enjoy it with chips or crackers, or savor it as a refreshing side salad.



Ingredients

6-8 (makes approx. 3 cups)

  • 1 (15.5 oz) can black beans, drained and rinsed
  • 1 (15.5 oz) can pinto beans, drained and rinsed
  • 6 cherry tomatoes, cut into quarters
  • ½ c corn, cooked
  • ½ c chives, chopped
  • 1/3 c red wine vinegar
  • 1/4 c balsamic vinegar
  • 1 Tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Garnish with crumbled feta cheese and fresh basil!

Directions

  1. In a medium bowl, add all ingredients and mix.
  2. Cover and place in the refrigerator for at least 2 hours. Mix periodically. This will allow the flavors to infuse into the beans and veggies.
