Cauliflower Mashers

Cauliflower mashers are a perfect substitute for mashed potatoes and requires no peeling!  It's a great way to sneak vegetables onto our kids plates.  They're loaded with B vitamins, omega 3-fatty acids, vitamin K and fiber.  Cauliflower is known for it's positive effects on the cardiovascular and digestive systems.  Research has shown it aids in cancer prevention due to it's high nutrient content.


(serves 4-6)

  • 8 c cauliflower, washed
  • 1 1/2 c low-sodium chicken broth (College Inn Organic)
  • 1/2 c light sour cream
  • 1/2 tablespoon butter 
  • 2 tablespoons skim milk
  • sea salt, to taste
  • ground black pepper, to taste

* garlic lovers- add a 1 teaspoon or more of garlic, minced.


1. In a medium size pot, add cauliflower and chicken broth.  Cover and bring to a boil.  Cook until very tender, about 10 minutes.

2. Remove pot from heat.  Add sour cream, butter, milk, salt and pepper.

3. Blend until smooth with an immersion blender.

4. Place cauliflower mashers in a serving bowl.

5. Garnish with parsley and serve warm.
