Serves 8-10

  • 9 chicken breasts, cut thin
  • 1/2 c cilantro lime marinade or your preference
  • 4 bell peppers, sliced
  • 2 sweet onions, sliced
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/2 lime, juiced
  • salt, to taste
  • pepper, to taste
  • 16-20 soft tortillas


  1. Marinate the chicken for at least 2 hours.
  2. Grill chicken on high-medium heat, flip once, and cook until internal temp is 165°F (8-10 minutes). Slice and set aside.
  3. Sauté vegetables on medium-high heat. Season with spices, lime juice, salt and pepper. Cook until tender (15 minutes).
  4. Warm tortillas in the oven (5 minutes).
  5. Serve chicken and vegetables in tortillas and top with your favorite accompaniments like cheese, guacamole, sour cream, and salsa.
