How to make Sourdough Breakfast Sandwich

This simple breakfast sandwich offers protein, fiber, and healthy fats that can help support weight management goals by promoting satiety and reducing the urge to snack on less nutrient-dense foods throughout the day.  Easily digestible sourdough is made through a natural fermentation process.  Sourdough has a low glycemic index and it may provide prebiotic benefits by nourishing the “good” bacteria in your gut.  Eggs are packed with protein, vitamin D, and healthy fats.  Avocado, tomato, and spinach contain good sources of fiber, and vitamins A, C, and K, along with folate and iron.  Our recipe is easily customizable if you’d like to add a slice of cheese or other vegetables.

 



Ingredients

1 serving

  • 2 slices sourdough bread, toasted
  • 2 eggs, over easy (or your preference)
  • everything but the bagel seasoning, to taste
  • ¼ avocado, divided
  • 2 slices tomato
  • 1 handful spinach, divided

Directions

  1. Mash avocado on each slice of toast.
  2. Top with everything but the bagel seasoning.
  3. Place tomato slices on sourdough bread.
  4. Add spinach to each slice of bread then top with eggs.
  5. Combine each half into one sandwich and enjoy!
