Garden Rocket Beet Salad

I'm a new fan of beets and I'm excited to share this energy packed salad with you. It's pretty and delicious-perfect for lunch and dinner guests.  Arugula, also known as "rocket salad" compliments the sweet and earthy taste of the beet with its peppery flavor.  The creamy texture and mild flavor of the goat cheese makes this salad oh-so good.  I like to roast the beets in advance and store them covered in the refrigerator. This frees up more time to spend with guests prior to serving.  

Ingredients (4 servings)

  • 4 medium beets, stem removed
  • 6 c arugula
  • 4 oz goat cheese
  • ¼ c extra virgin olive oil
  • sea salt, to taste
  • honey dijon dressing


1. Heat oven to 350 degrees. Wash and dry beets.  Line a baking pan with foil and lightly coat with no stick spray.

2. Drizzle beets with evvo and sprinkle with sea salt.

3. Roast beets for 1 hour (until tender) and allow to cool. 

4. Peel beets with a paring knife and cut into ½ inch slices. 

5. Evenly arrange arugula and beets onto salad plates. Top with goat cheese and serve with dressing on the side.
