Strawberry, Avocado, and Quinoa Salad

 Increase your intake of vitamin C, heart healthy fat, and iron by eating one of our favorite salads.  This colorful and healthy salad is satisfying for lunch or dinner.  Keep these ingredients on hand for an easy dish to take to your next picnic.


Ingredients

(1 serving)

  • 2 c organic spring mix salad
  • 1 c quinoa, cooked and cooled
  • ½ avocado, sliced
  • 2-3 fresh strawberries, sliced
  • 1 tablespoon lemon vinaigrette

Directions

1. Place spring mix in a salad bowl.  

2. Add quinoa, avocado, and strawberry.

3. Drizzle with lemon vinaigrette.
