Watermelon Avocado Kale Salad

Summer’s almost here and that means our favorite fruits and vegetables of the season will soon be coloring our plates.  This time of year makes for an easy and nutritious toss together meal.  I had to pick up a watermelon today-it was singing summer! It adds a refreshing taste to this heart healthy salad. For those that are physically active, watermelon helps to prevent sore muscles by relaxing blood vessels and therefore improving circulation. Even though watermelon is more than 90% water, it provides 1/3 of the recommended daily value for vitamins A and C. Watermelon is also one of the best sources of the cancer fighting antioxidant, lycopene.  

Ingredients

(1 serving)

  • 2 c raw kale, washed, dried and stems removed
  • 1 slice watermelon, chopped
  • ½ avocado, chopped
  • 1 tablespoon feta cheese, crumbled

Directions

1. Place kale leaves in a salad bowl.

2. Top with watermelon, avocado, and feta.

3. Toss with lemon vinaigrette dressing.

4. Serve with grilled chicken or sliced almonds for additional protein.
