Veggie Lovers Pizza

 Pizza is definitely a family favorite.  I love that the whole family can be involved in making this recipe.  Our daughters like to slice, and our son loves to build.  The vegetables piled on top add a nutritious twist to this otherwise calorie-dense comfort food.  The multigrain crust is also a good source of fiber.  Keep in mind, the thinner the crust, the thinner our waistlines!



(1 serving: 2 slices)

  • 1 small multigrain or gluten-free pizza crust (approx. 7 inches)
  • extra virgin olive oil, to taste
  • garlic, minced, to taste
  • 1/2 c zucchini 
  • 1/2 c yellow pepper, thinly sliced
  • 1/2 c red pepper, thinly sliced
  • 1/4 c sweet onion, thinly sliced
  • 1/2 c spinach 
  • 1/4 c mozzarella or dairy-free cheese


1. Preheat oven to 400ºF.

2. Lightly coat pizza crust with olive oil.

3. Sauté vegetables in olive oil and garlic on low-medium heat. 

4. When vegetables are tender add spinach.  Sauté spinach for 5 minutes.

5. Add vegetables and mozzarella to crust.

6. Bake until cheese is melted.
